Before Spain, he worked at many leading Italian restaurants including the 1 Michelin Star Assaje restaurant at the Aldrovandi Villa Borghese in Rome, 1 Michelin Star Giuda Ballerino Restaurant Rome, 1 Michelin Star Locanda del Pilone in Piedmont and at the 3 Michelin Star La Pergola at the Waldorf Astoria Rome.
